Mitch's Favorite Meat Loaf
Simple, moist and flavourful! 

Ingredients:

1-2.lbs Good Family Farms Ground Beef 
3/4 cup sour dough bread (sliced in very small chunks)
3/4 finely chopped onion 
1/2 cup milk (or milk alternative)
1 Good Family Farms Organic Egg
1 tbsp Worcestershire Sauce 
2-3 tsp sea salt 
1/2 tsp pepper
4  Dill pickles chopped finely
1 tbsp dijon mustard
1 tbsp maple syrup 

Instructions: 

- Combine ground beef, sour dough bread, onions, milk, egg, pickles, Worcestershire, mustard, maple syrup, salt and pepper. Pack thoroughly into a loaf pan. 
- Bake at 350 degrees F for 1 hour. Use fat  around loaf as a sauce and add lots to your loaf once its sliced. 
* Makes roughly 6 servings  
For a variation: 
- Stir in 1/2 cup shredded carrots and/or organic hard cheese 
- Boil and mash 4 sweet potatoes with milk and butter. place on top of meatloaf with 30 mins of cook time left. 
- Spread an organic ketchup over the top before putting in the oven

Slow Cooked Bone Broth 
Healing drink for Gut and joint health

Ingredients:
 1 package Good Family Farms Beef Bones/ Pork Bones/ Chicken Bones or Marrow Bones
2-4 yellow/white onions chopped (optional) 
2-4 carrots chopped (optional) 
2-4 celery sticks chopped (optional) 
2-4 cloves of garlic sliced in chunks (optional)
2 tbsp salt 
1 tsp pepper 
fresh thyme or fresh parsley 
1 tbsp apple cider vinegar 
 
Directions:
- Sear bones in cast iron pan on each side for a few minutes (this is optional but can add extra flavour to your broth) 
- Place bones, herbs and vegetables (if using) into large pot (as large as you have!). Completely cover all ingredients with water
- Bring to a boil and once reached, reduce to simmer
- Leave bones to simmer for as long as possible - the longer the better - both is generally done when it turns a rich brown colour and has lots of flavour
- Beef + marrow bones = 12 -24 hours 
- Chicken bones = 6-8 hours 
- All other bones = 10-12 hours 
- Strain broth over bowl using mesh strainer 
- Add more salt/ pepper/ seasoning of your choice to taste 
- Pour broth into glass jars and let cool before freezing 
- Drink a glass heated up every day! Can be used in replacement of coffee or teas

Grass Fed Beef Roasts 
Brisket, Sirloin Tip, Blade, Cross Rib Roast

 Optional: Take roast out of package and place on draining tray. Dry outside with cloth to remove excess moisture. Cover roast in salt and let sit on draining tray in fridge over night. Roast can also be covered in other herbs and spices if you would like. Roast can also sit in raw milk over night to tenderize 

Directions:  
-  Put roast in crock pot or in oven pan. Pour in water so that roast sits in roughly an inch
- Cover roast with sea salt, pepper, seasoning. Salt will really bring out the flavour in your roast, so don't be shy!
- Chop garlic and onions and place around roast 
- * The KEY to Grass Fed Beef is to cook LOW AND SLOW - whether in the oven or crock pot
- Cook in oven at 200 degrees F for 6-8 hours 
- Cook in crock pot on LOW HEAT for 6-8 hours 
- Add chopped sweet potato, carrots, other root vegetables when there 2 hours left of cooking time (optional)

Pulled Pork
For the best pulled pork, use a Picnic or Butt Roast 

Before cooking, add the following to your crock pot: 
1 medium onion chopped in chunks
2 cloves garlic chopped 
2 tsp of Garam masala seasoning 
1 tsp of sea salt 
1/2 tsp of pepper
*Cook on low for 6-8 hours 

After cooking, drain some of the fat but keep at least 2 cups of the liquid. Pull the pork apart and add your favourite bbq sauce to taste and some sea salt
Great idea for sandwiches or tacos with your favourite toppings! Or trying having it for  breakfast using a pancake as a shell!

Sweet Potato Lasagna

Ingredients:
2 medium sweet potatoes, boiled so you can remove skin and to soften
1 jar organic tomato sauce 
2 cups of baby spinach
1 medium size onion, chopped
1 clove of garlic, chopped
1 cup of celery, chopped
8 oz of mushrooms (or more!)
2 lbs of ground beef or pork (Or mix both)
1 tsp sea salt
1/2 tsp pepper
1 tsp of Italian seasoning
2 cups cheese of your choice

Directions:
Fry ground meat. Add onions and garlic until meat is brown. Add celery, mushrooms, seasoning and tomato sauce and let simmer for 10 minutes. Layer in casserole dish the following: sweet potatoes that have been sliced, spinach, 1/2 of the sauce and put 1/2 the cheese on top. Then another layer of sweet potatoes, sauce and cheese.

Bake for 45 minutes at 325 degree F.

Cabbage Rolls

Ingredients:

1 lb of ground beef
1 cup of bread crumbs (optional)
1 tsp of sage 
1 tsp of Italian seasoning 
1/2 tsp sea salt
1/2 tsp of pepper
1 medium onion, chopped
1 cup rice

Directions:
Mix ground beef, bread crumbs, onions and seasoning in a bowl. Scald cabbage in boiling water. Put some of the meat mixture in a cabbage leaf and roll tightly. Put rolls in a roasting pan and cover with tomato juice. Cover with lid and bake at 350 degree F for 1 hour. Enjoy!
